Discovered in 1826, the really dramatic and romantic gap between the Regency period and the Victorian era, Ruby Jons are the “sport’ of Jonathan apples.
Biologically, a sport is a spontaneous mutation that produces offspring with abnormal variation from its parents. Ruby Jons retained much of the characteristics of a Jonathan apple, but became intensely more beautiful with a super deep, velvety crimson skin that bleeds into snow white flesh. Their flavor is cider-y and warm with a good kick of acidity that hits you from behind, giving it an unexpected and much needed tartness that rounds out the flavor.
Snow White features Ruby Jon and Cortland sherbets so the texture and flavor of the apples wouldn’t be too clouded by a creamy base. It’s a bit icier and lighter than your normal ice cream, and gives you more of an apple eating experience. A super dark apple cider caramel and plenty of cloves gives it a warm, spicy finsh.
